As you may know, August is National Pineapple Month, which is my one of my favorite fruit and ingredients to cook with. Some may say pineapple has a high sugar count and is not the best choice for diets, but I beg to differ. With my father in law trying to improve his health, lose weight and reduce his blood pressure, I decided to make a delicious salad for the whole family that he too can enjoy. This is my salad recipe, which is 517 calories per serving which includes 2 tbsp of dressing as part of the 517 calories, I hope you all enjoy! :
Apple Mango Tango Grilled Chicken Salad:
Salad Ingredients:
- 1 8oz bag of Grilled & Ready Tyson Fully Cooked Chicken Breast Chunks
- 2 cups Fresh Shredded Romaine Lettuce and Red Cabbage
- 2 cups Fresh Shredded Iceberg Lettuce
- 4 pineapple rings, drained & diced
- 1/2 cup Mango, sliced
- 1/2 cup of granny smith apples, peeled and diced
Salad Preparation Instructions:
1. Place chicken pieces and 1 tablespoon water in nonstick skillet.
2. Heat on MEDIUM HIGH for 3 minutes or until warm.
3. Place cooked chicken aside in bowl and allow to cool down.
4. While chicken is cooling down, place shredded romaine lettuce and red cabbage, fresh shredded iceberg lettuce, diced mango,diced pineapple, diced granny smith apples in a large salad bowl.
5. Add cooked grilled chicken chunks to salad and toss salad until salad is mixed evenly.
6. Serve with 2 tbsp of Homemade Orange Oregano Dressing drizzled over salad.
Homemade Orange Oregano Dressing Recipe:
Dressing Ingredients:
- 1/2 cup orange juice
- 1/4 cup cider vinegar
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons fresh oregano, chopped, or 3/4 teaspoon dried
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Dressing Preparation Instructions:
1. Add orange juice, cider vinegar, extra virgin olive olive, oregano, Dijon mustard, salt and black pepper to a blender.
2. Blend until thoroughly mixed and becomes a creamy consistency.
